What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly that holds the fruit in place.
Crystallized ginger
Adds a sharp, spicy aroma and bite that contrasts with the sweet jelly.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Ginger ale
Adds liquid and carbonated sweetness, flavouring the jelly.

The step that matters

Fold in the fruit when the jelly begins to congeal. If the gelatin is still fully liquid, the chopped fruit sinks and settles unevenly. If it has already set, the fruit will not mix in evenly. Waiting for partial thickening suspends the pieces throughout the mould.

Swap the celery

How well each one fits the dish's main ingredients (gelatin, ginger, sugar, lemon, grape, apple, pineapple):

  2. Cardamomfits better
