Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, beat the egg yolks until well combined.

  2. Add the white sugar and creamed butter, mixing until smooth.

  3. Gradually incorporate the sifted flour into the mixture.

  4. Gently fold in the beaten egg whites last.

  5. Add your choice of flavoring.

Bake

  1. Pour the batter into a prepared baking pan.

  2. Bake in a slow oven at 300°F (150°C) for 1½ hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and emulsify the batter, giving the cake a tender crumb.
White sugar
Sweetens the cake and helps trap air when creamed with butter for lightness.
Butter
Adds fat for flavor and a moist, tender texture.
Flour
Provides the structure that holds the cake together as it sets.
Egg whites
Folded in beaten, they trap air that lifts and lightens the batter as it bakes.

The step that matters

Gently fold in the beaten egg whites. Overmixing knocks out the air trapped in the whites, leaving a dense cake instead of a light, well-risen one. Fold just until no white streaks remain.
