Apple and sugar barely smell alike, yet cooks put them together in 16,478 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit filling that softens and turns tender during steaming.
Sugar
Adds sweetness and helps draw flavour out of the apples.
Pastry
Forms the enclosing case that holds the filling and seals in moisture during steaming.

The step that matters

Steam with boiling water at the right level. Boiling water must reach only halfway up the cups so steam cooks the dumplings evenly while the pastry stays moist and the cups do not float or boil over. Keeping the water at a steady simmer maintains even heat for the full steaming time.
