Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Cheese and Egg Patties

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the patties

  1. Remove the soft interior of the puff pastry patties.

  2. Place 1 tablespoon of grated cheese in the bottom of each patty.

  3. Add a pinch of salt, pepper, minced parsley, and a few drops of lemon juice.

  4. Carefully break an egg over the cheese mixture in each patty.

  5. Sprinkle with additional salt, pepper, and cheese.

Bake and serve

  1. Replace the tops of the patties and bake at 350°F (175°C) until the eggs are set, covering with brown paper to prevent scorching.

  2. Serve on a heated platter garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Sets when baked to form the filling's soft, firm body.
Puff paste patties
Crisp, flaky pastry shell that holds the filling while baking.
Grated cheese
Melts into the filling, adding richness and savory flavor.

The step that matters

Covering with brown paper while baking. The egg sets gently in the hot oven, but the pastry edges can scorch before the egg is firm. A paper cover shields the surface from direct heat, letting the egg set evenly while the pastry bakes through.
