Home-making of Unfekmented Grape Juice

Ingredients

Directions

  1. Crush the grapes and strain through a cloth sack.

  2. Twist the sack with two people to express the juice.

  3. Heat the juice in a double boiler until it steams, not exceeding 200°F (93°C).

  4. Pour the juice into a glass, earthen, or enamel dish and let it settle for 24 hours.

  5. Carefully drain and run the juice through several layers of clean flannel.

  6. Transfer the juice into sterilized bottles or glass jars, leaving space at the top.

  7. Place a thin board or wire rack in the bottom of a wash-boiler and set the filled containers on it.

  8. Fill with cold water to within an inch of the top and heat until just about to simmer.

  9. If using bottles, melt sealing wax and pour over the corks to seal.
