What each ingredient does

Gentian root
Provides the bitter flavour that defines the drink.
Dried orange peel
Adds citrus aroma and a light bitter-sweet note.
Cardamom seed
Contributes warm, aromatic spice notes.
Cinnamon
Adds warm, sweet spice aroma to the infusion.
Cochineal
Gives the bitters a deep red colour.
Brandy
Acts as the solvent that extracts flavour and colour from the botanicals.

The step that matters

Macerating for 14 days. Alcohol extracts bitter and aromatic compounds slowly from plant material. Covering the mixture keeps the alcohol from evaporating, and the full resting time lets the flavour build evenly. Stopping early gives a weak, unbalanced result.
