Fish, Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Melt butter in a saucepan.

  2. Add flour and cook until golden.

  3. Stir in chopped onion.

  4. Gradually add cream or milk, stirring constantly.

  5. Slice mushrooms and truffles, then mix with sweetbreads.

  6. Add salt, cayenne, and Tabasco to the mixture.

  7. Pour in the sauce and mix well.

  8. While hot, add butter, lemon juice, salt, pepper, and sherry.

  9. If sauce is not thick enough, mix flour with milk and add to the sauce.

  10. Fill cases with the mixture, sprinkle with bread crumbs, and bake at 400°F (200°C) for 15-20 minutes.
