What each ingredient does

Salt pork
Renders fat that carries flavour through the broth as it browns.
Potatoes
Release starch as they cook, adding body and thickness to the soup.
Clams
Provide the main seafood flavour and savoury brininess of the soup.
Flour
Thickens the milk mixture so it lends body to the soup instead of staying thin.
Milk
Adds creaminess and mild sweetness, rounding out the broth.

The step that matters

Adding the milk mixture to the boiling soup. Flour needs to be fully blended into the liquid first, or it clumps. Once it is smooth, boiling activates the starch so the soup thickens evenly. Milk can also scorch or curdle if left to boil too hard, so keep the heat controlled while it simmers.

Swap the onion

How well each one fits the dish's main ingredients (pork, potato, clam, flour, milk, butter, pepper):
