Roast Chickens

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Wash the chickens thoroughly inside and out.

  2. Stuff the chickens as directed for turkeys.

  3. Baste the chickens with butter, lard, or drippings.

  4. Roast the chickens in a 400°F (200°C) oven for about 1 hour until cooked thoroughly.

Make the gravy

  1. Stew the chicken innards until tender with little water.

  2. Chop the innards and mix them with gravy from the dripping pan.

  3. Thicken the mixture with brown flour and season with salt and pepper.

Serve

  1. Serve with cranberry sauce or apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the main protein, which cooks through during roasting in the hot oven.
Butter, lard, or drippings
Add fat that helps the skin brown and keeps the surface from drying out.
Brown flour
Thickens the drippings mixture into a smooth gravy as it cooks.

The step that matters

Roast the chickens until cooked thoroughly. Poultry must reach a safe internal temperature throughout. Roasting for only the stated time may leave the thickest parts undercooked, so check doneness in the thigh before serving.

Swap the cranberry

How well each one fits the dish's main ingredients (chicken, butter, pepper, flour):

  1. Lemonfits better
  2. Coconutfits about as well
  3. Avocadofits about as well
  4. Cranberrythe original

Fit is the average pairing score against chicken, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
