What each ingredient does

Tomatoes
Provide the main body, moisture, and flavor that the sauce reduces into a thick ketchup.
Shallots
Add savory aromatic flavor that deepens the sauce during long simmering.
Vinegar
Adds acidity that brightens the flavor and helps keep the finished ketchup tangy.

The step that matters

Adding the vinegar ten minutes before removing from heat. Vinegar is volatile and its sharp aroma and acidity fade with prolonged boiling, so adding it late keeps the tang noticeable in the finished ketchup.
