What each ingredient does

Green tomatoes
Provide the main bulk and texture of the pickle once cooked down.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Provides the acidity that preserves and gives the pickle its tang.
Onions
Add savoury depth and body as they soften during the long simmer.

The step that matters

Boil slowly for 3 hours. A gentle, long simmer lets the tomatoes soften and the spices and vinegar blend into the pickle. Boiling too hard can break the tomatoes apart and scorch the sugar on the bottom of the kettle.

Swap the mace
