Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, bulk and flavour of the ketchup once cooked down.
Vinegar
Adds acidity that sharpens flavour and helps preserve the finished ketchup.
Garlic
Contributes pungent aroma and savoury depth to the cooked sauce.
Cayenne pepper
Adds heat that builds as the sauce reduces.

The step that matters

Boil until reduced by half. Long boiling evaporates water and concentrates the tomato solids, giving the ketchup its thick texture and sharp, intense flavour. Stopping early leaves it thin and watery.

Swap the tomato
