What each ingredient does

Coxe's english gelatine
Sets the liquid mixture into a firm, sliceable body as it cools.
Milk
Forms the liquid base that gives the cream its body and softness.
French chocolate
Provides the chocolate flavour and deep colour of the cream.
White sugar
Sweetens the cream and balances the bitterness of the chocolate.
Eggs
Yolks thicken the custard and add richness and a smooth texture.

The step that matters

Stir in the soaked gelatin and the egg yolks, mixing briskly for 3 minutes.. Egg yolks can scramble if the hot mixture is overheated, and gelatin must be fully dissolved to set evenly. Brisk, steady mixing keeps the custard smooth and evenly thickened.
