What each ingredient does

Currants
Provides the tart fruit flavour and the base of the jam.
Sugar
Adds sweetness and, once boiled with the juice, thickens and helps preserve the jam.

The step that matters

Boiling the juice with the sugar. Boiling drives off water so the sugar and fruit concentrate and thicken into a jam. Boiling too briefly leaves the jam runny, while boiling too long can darken it and give it a scorched flavour.
