Jellied Chicken

Ingredients

Directions

Prepare the chicken

  1. Boil the chicken until it easily slips from the bones.

  2. Reduce the boiling water to about 1 pint.

  3. Remove the meat from the bones in good-sized pieces, discarding gristle and fat.

Set the jelly

  1. Grease a mould with butter and place the chicken pieces inside.

  2. Skim the fat from the remaining liquid and season it with salt and pepper.

  3. Dissolve the gelatine in the hot liquid and pour it over the chicken in the mould.

  4. Refrigerate until set.

What each ingredient does

Chicken
Provides the meat that forms the body of the dish, set within the jelly.
Gelatine
Sets the cooking liquid into a firm jelly that holds the chicken together when chilled.

The step that matters

Dissolve the gelatine in the hot liquid. Gelatine must fully dissolve before it is poured, or it will set unevenly and leave grainy or cloudy patches. Skimming the fat first keeps the jelly clear and prevents a greasy layer on the surface.
