Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Preheat the oven to 350°F (175°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

  3. Place the roast in the oven and baste frequently while roasting.

  4. Roast for 15 minutes per pound for rare, longer for well done.

Make the sauce and serve

  1. For the sauce, collect the drippings from the pan.

  2. Add Worcestershire sauce and tomato ketchup to the drippings.

  3. Thicken the sauce with browned flour and serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Provides the main meat, whose fat and juices flavour the dish as it cooks.
Flour
Dredging helps the surface brown and lightly coats the meat for a crust.
Worcestershire sauce
Adds savoury, tangy depth to the drippings that become the sauce.
Tomato ketchup
Adds sweetness and acidity to the drippings for a richer sauce colour and flavour.
Browned flour
Thickens the sauce as its starch swells when heated in the drippings.

The step that matters

Roast for 15 minutes per pound for rare, longer for well done. Meat continues to cook after it leaves the oven and internal temperature rises, so pulling the roast before it reaches the target doneness helps avoid overcooking. Checking with a thermometer is more reliable than time alone.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
