Boiled Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the ham

  1. Soak the ham in cold water for 12 to 24 hours.

  2. Cover the ham with boiling water.

  3. Add vinegar, bay leaves, thyme, and parsley.

  4. Boil slowly for 2.5 hours.

  5. Remove the ham.

Trim and glaze

  1. Skim the surface.

  2. Leave a ½ inch layer of fat.

  3. Cut off any blackened parts with a sharp knife.

  4. Place the ham in a dripping pan, fat side up.

  5. Grate bread crust over the ham.

  6. Sprinkle powdered sugar over the grated crust.

  7. Bake in a 400°F (200°C) oven for 30 minutes until browned.

Serve

  1. Serve cold.

  2. Slice the best parts.

  3. Use scraps for sandwiches or an omelet.

What each ingredient does

Ham
Is the main cut that is simmered, then trimmed and browned as the centerpiece.
Vinegar
Adds a sharp acidity that brightens the flavor of the simmering liquid.
Bread crust
Grated crumbs form a crisp, golden crust on the surface of the ham as it bakes.
Powdered sugar
Sugar helps the grated crust brown and caramelize in the oven.

The step that matters

Bake until browned. The sugar and grated crust brown quickly in the hot oven, so the ham can scorch or dry out if left too long. Watch it closely and stop once the surface is golden.

Swap the thyme

How well each one fits the dish's main ingredients (ham, vinegar, parsley, sugar, bread):
