What each ingredient does

Green tomatoes
Provide the bulk of the relish and release liquid that the salting draws out.
Onions
Add savory flavor and body that softens during the long cooking.
Sugar
Adds sweetness that balances the sharp vinegar and spices.
Vinegar
Adds acidity that preserves the relish and gives it its tang.
Ground mustard
Adds pungent, sharp flavor to the spiced syrup.

The step that matters

Pour the boiling syrup over the packed vegetables. The syrup must be fully boiling when poured so the hot liquid heats the vegetables and helps the jar seal safely. Packing the vegetables tightly leaves less air to trap and keeps them submerged.
