Cream Pies

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites and yolks separately until well combined.

  3. Add the sugar to the egg yolks and mix well.

  4. Sift the flour with the baking soda and cream of tartar, then add to the egg mixture.

  5. Pour the batter into four pie tins and bake until golden.

  6. For the custard, cook the milk in a double boiler.

  7. Wet the cornstarch with a little milk, then add it to the boiling milk along with the eggs and sugar.

  8. Stir until thickened, then add flavoring to taste.

  9. Once cooled, spread the custard between two layers of pie crust.
