Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Directions
The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.
Soften the butter in a moderately warm place before starting.
In an earthen dish, combine the softened butter and sugar.
Beat in the egg whites and then add the flour.
After mixing in the yolks, add spices and liquors.
Fold in the fruit with the flour.
Bake small cakes in a hot oven (400°F/200°C) and larger cakes in a moderate oven (350°F/175°C).
To check if a large cake is done, pierce it with a broom straw; it should come out clean. Let it cool in the tin for 15 minutes before removing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
