Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Ingredients
Directions
Make the broth
Bring 4 quarts of cold water to a boil and skim off any foam.
Add ½ cup of barley and 1 neck of mutton; boil for 30 minutes.
Add vegetables and finish
Skim the surface again and add chopped vegetables: 2 carrots, 1 large onion, 1 small head of cabbage, 1 bunch of parsley, and 1 sprig of celery top.
Season with pepper and coarse sea salt to taste.
Cook the soup for an additional 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Barley
- Thickens the broth as its starch releases during long simmering, giving body to the soup.
- Neck of mutton
- Releases fat and collagen into the water, adding rich meaty flavour to the broth.
- Carrots
- Add natural sweetness and colour, and hold their shape through long cooking.
- Cabbage
- Adds bulk and a mild sweet flavour as it softens in the broth.
The step that matters
Skim the foam at the start and again after adding the vegetables. Foam and scum rising from the meat and vegetables can cloud the broth and carry off-flavours. Removing them keeps the soup clear and clean-tasting.

Fit is the average pairing score against barley, mutton, carrot, cabbage, parsley, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
