Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. In a saucepan, bring the milk to a boil and stir in the corn starch to thicken.

  2. Add the minced chicken, butter, salt, and pepper to the thickened milk and mix well.

Bake and fill

  1. Line small pâté pans with puff pastry.

  2. Bake the pastry in a preheated oven at 400°F (200°C) until lightly browned.

  3. Fill the baked pastry with the chicken mixture and return to the oven for a few minutes to brown slightly.

What each ingredient does

Cooked chicken
Forms the main body of the filling and gives it its meaty texture.
Milk
Provides the liquid base that the corn starch thickens into a smooth, creamy binder.
Corn starch
Thickens the hot milk, giving the filling body so it holds together when baked.
Butter
Adds fat for richer flavour and a softer, moister mouthfeel in the filling.
Puff pastry
Forms the flaky, layered shell that crisps and browns in the oven.

The step that matters

Thicken the milk fully before adding the chicken. Corn starch only thickens once the milk is hot enough to gelatinize its starch. If the milk is not brought to a boil and stirred until it thickens, the filling stays thin and runny and will not hold its shape in the pastry.
