Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the bulk of the dish, giving the meat body and the jelly its savory base.
Eggs
Bind the mixture and help it hold its shape when sliced.
Rolled crackers
Absorb liquid and help bind the meat into a firm roll.
Butter
Adds richness and moisture to the meat as it cooks.

The step that matters

Cook slowly for 2 hours. Gentle, slow heat keeps the meat tender and moist. Adding water occasionally helps prevent drying, so the roll stays juicy rather than tough.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
