What each ingredient does

Macaroni
Forms the bulk of the dish and absorbs some of the sauce's moisture.
Tomatoes
Provide the main body, moisture and acidity of the sauce.
Lard
Adds fat that carries flavour and gives the sauce a richer mouthfeel.
Grated cheese
Adds savory, salty flavour and a slightly sticky body to the pasta.
Onion
Adds aromatic sweetness that mellows as the sauce simmers.

The step that matters

Simmering the sauce slowly for 2 hours. A long, gentle simmer lets water evaporate and concentrates the tomato flavour, while the sauce can scorch or dry out at the bottom of the pan if the heat is too high. Adding water as needed keeps it from thickening too far.

Swap the onion

How well each one fits the dish's main ingredients (cheese, tomato, pepper, parsley, egg):

  1. Capsicumfits better
  2. Carrotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against cheese, tomato, pepper, parsley, egg. Candidates are from the same food group and used in at least 100 recipes.
