Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as its starch swells and softens during soaking and cooking.
Egg yolks
Thicken the pudding as they set with heat and add richness.
Milk
Forms the creamy liquid base that the tapioca thickens.
Sugar
Sweetens the pudding and balances the eggs.
Egg whites
Beaten into a light foam that tops the pudding and adds airiness.

The step that matters

Combining the egg yolks with the boiling tapioca. Hot liquid can scramble egg yolks into lumps if they meet it too quickly. Adding the mixture gradually while stirring keeps the custard smooth as it thickens.
