Directions

Prepare the apples

  1. Remove stems and blossoms from the apples.

  2. Scald the apples and pour off the first water.

  3. Place the apples in plenty of water and cook slowly until they begin to soften.

Make the jelly

  1. Dip off the juice for jelly, straining it through flannel.

  2. For jelly, use 1 pound of juice to 1 pound of sugar.

  3. Add more water to the remaining apples and let them stew until very soft.

  4. Strain the pulp through a sieve to remove cores and seeds.

  5. To the pulp, add brown sugar, pound for pound, and cook carefully while stirring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the natural pectin and acidity that help the juice set into jelly.
Sugar
Sweetens the juice and helps it thicken and set as it cooks.
Brown sugar
Sweetens the pulp and adds a deeper, caramel-like flavor.

The step that matters

Cooking the pulp with brown sugar. Sugar can scorch on the bottom of the pan if left unstirred, so cooking carefully while stirring prevents burnt flavor. Brown sugar contains molasses, which burns more easily than white sugar.
