What each ingredient does

Veal
Forms the main body of the roll, giving the relish its meaty substance and texture.
Eggs
Bind the chopped veal and crackers together so the roll holds its shape when sliced.
Rolled crackers
Absorb moisture and help bind the mixture, giving it a softer, more cohesive texture.
Butter
Adds fat and richness, keeping the thin veal moist during slow cooking.

The step that matters

Cook slowly with added water. Slow, gentle heat keeps the lean veal moist and tender, and occasional added water prevents it from drying out or scorching in the oven.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, egg, butter, cream):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, pepper, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
