What each ingredient does

Molasses
Provides sugar that the yeast ferments, and gives the beer its sweetness and dark colour.
Yeast
Ferments the sugars into alcohol and carbon dioxide, making the drink fizzy.
Hops
Add bitterness and aroma that balance the sweetness of the molasses.

The step that matters

Skim off the yeast carefully and pour the liquid into bottles. Yeast left in the liquid keeps fermenting inside sealed bottles, building pressure that can make them burst. Skimming it off with care leaves the clear liquid behind.
