What each ingredient does

Salt pork
Renders fat and flavor into the pan, seasoning the base of the soup.
Onion
Adds sweetness and aroma as it softens in the rendered fat.
Clams
Provide the main seafood flavor and body of the soup.
Flour
Thickens the milk so the soup becomes creamy rather than thin.
Milk
Gives the soup its creamy richness and mild sweetness.

The step that matters

Adding the flour mixture to the milk. Flour mixed only with water and added to hot liquid can clump. Mixing it smoothly first lets the starch disperse evenly, so the thickened soup stays smooth when it boils.

Swap the onion

How well each one fits the dish's main ingredients (pork, clam, flour, milk, butter, pepper, sauce):

  1. Potatofits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Onionthe original
