Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked until very soft, it breaks down to give the pudding a thick, tender body.
Apples
Stewed and sieved into a smooth pulp that adds moisture, flavour and body to the pudding.
Egg yolks
Enrich the mixture and help it set into a custard-like texture when baked.
Egg whites
Beaten stiff, they form a light meringue topping that adds airiness and gentle browning.

The step that matters

Bake until set. Underbaking leaves the egg-enriched filling loose and runny, while overbaking can make the eggs weep or turn rubbery. Baking until just set gives a firm but tender pudding.

Swap the apple

How well each one fits the dish's main ingredients (rice, butter, egg, sugar):
