Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

Mix and bake

  1. In a large bowl, combine the ground beef, salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and eggs. Mix well until all ingredients are thoroughly combined.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Provides the main body and meaty structure of the loaf.
Eggs
Bind the mixture and set during baking to hold the loaf together.
Boston crackers
Absorb moisture and add bulk, helping the loaf stay tender.
Isinglass (gelatin)
Adds moisture and helps the loaf hold its shape as it cools.
Salt pork
Adds fat and richness, keeping the loaf moist during baking.

The step that matters

Let cool before slicing. Cooling lets the proteins and gelatin set, so the loaf firms up and holds clean slices instead of crumbling.

Swap the clove

How well each one fits the dish's main ingredients (beef, pork, gelatin, butter, pepper, egg):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Nutmegfits better
  4. Clovethe original

Fit is the average pairing score against beef, pork, gelatin, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
