What each ingredient does

Crabs
Provides the main flavor and the red color of the finished jelly.
Loaf sugar
Adds sweetness and helps the syrup thicken into a firm jelly.

The step that matters

Drain without squeezing. Squeezing the jelly bag forces fine solids through the cloth, which makes the finished jelly cloudy instead of clear.
