Veal Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Butter a mold and layer it with veal and ham slices.

  3. Season the layers with cayenne, salt, mace, parsley, shallot, and hard-boiled egg slices.

  4. Press the mixture down firmly.

  5. Bake in the oven until cooked through.

  6. Prepare veal gravy by adding a few shreds of isinglass and straining it.

  7. Mix in a small quantity of catsup and pour it over the veal cake while hot.

  8. Allow to cool, then turn it out of the mold.
