What each ingredient does

Tomatoes
Form the bulk of the ketchup, providing body, moisture and the base flavour as they cook down.
Shallots
Add savoury, aromatic depth that rounds out the sharpness of the tomatoes.
Red peppers
Supply heat and a pungent, peppery bite to the sauce.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the ketchup.

The step that matters

Adding the vinegar ten minutes before removing from heat. Vinegar's sharp acidity is volatile and fades with long boiling, so adding it late keeps its tang bright. Adding it too early lets much of it evaporate, leaving the ketchup flat.
