What each ingredient does

Tomatoes
Provide liquid and acidity that build the body of the relish.
Cabbage
Adds bulk and a firm texture that holds up during long simmering.
Coarse sea salt
Draws water out of the vegetables, softening them and concentrating flavor.
Brown sugar
Adds sweetness that balances the vinegar and the spices.
Vinegar
Provides acidity that preserves the mixture and sharpens its flavor.

The step that matters

Draining the brine in the morning. Salt draws a lot of water out of the vegetables overnight. Draining it off keeps the relish from tasting harsh and salty and prevents it from becoming watery as it cooks.
