What each ingredient does

Red raspberries
Provide the main flavor and color of the vinegar.
Vinegar
Extracts the fruit's flavor and gives the syrup its sharp acidity.
Sugar
Sweetens the syrup and balances the vinegar's acidity.

The step that matters

Boil the mixture for 20 minutes, skimming off any foam. Sugar must dissolve fully and the mixture must boil long enough to thicken into a syrup that keeps well. Skimming removes foam and impurities so the bottled liquid stays clear.
