What each ingredient does

Beef heart
Provides the meat; long stewing breaks down its tough muscle fibres until tender.
Browned flour
Thickens the cooking liquid into a light, slightly toasted gravy.
Butter
Adds fat and richness, carrying flavour and giving the stew a smooth mouthfeel.
Onion
Softens during stewing and adds a mild, sweet aromatic base.
Catsup
Adds sweetness and acidity that brighten the savoury stew.
Celery
Contributes a fresh, aromatic vegetal note as it cooks in the liquid.

The step that matters

Stew until the meat is very tender. Heart is a dense, collagen-rich muscle that stays tough if cooked briefly. Slow, sustained simmering converts connective tissue into gelatin, so the meat becomes tender. Stopping early leaves it chewy.

Swap the onion
