What each ingredient does

Tongue
Main cut that becomes tender and succulent through long, moist simmering.
Bacon
Fat that bastes the meat from inside as it renders, adding savoury depth to the sauce.
Carrots
Release sweetness and body into the braising liquid as they soften.
Onions
Break down during simmering, adding sweetness and body to the sauce.
White wine
Adds acidity that helps lift and balance the rich flavours of the sauce.

The step that matters

Simmer gently while covered. Low, steady heat with the lid on keeps the liquid from reducing too fast and lets connective tissue in the tongue slowly soften into tender meat. Boiling hard would toughen the surface and dry the braise.
