What each ingredient does

Green tomatoes
Form the bulk of the pickle and, after salting, release liquid that is drained off before cooking.
Brown sugar
Adds sweetness that balances the sharp vinegar and tomato tartness.
Vinegar
Provides the acidity that preserves the pickle and gives it its tangy flavor.
Onions
Add savory flavor and soften into the long-cooked mixture.
Red peppers
Add sweetness, color and a mild heat to the pickle.

The step that matters

Draining after the 24-hour salt rest. Salt draws water out of the tomatoes by osmosis. Draining off that liquid concentrates the flavor and helps keep the finished pickle firm rather than watery.

Swap the mace

How well each one fits the dish's main ingredients (tomato, ginger, allspice, clove, cinnamon, horseradish, pepper):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against tomato, ginger, allspice, clove, cinnamon, horseradish, pepper. Candidates are from the same food group and used in at least 100 recipes.
