Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Acts as the base liquid and preserving agent, giving the sauce its sharp acidity.
Anchovies
Contribute deep savoury flavour that builds during the long resting period.
Garlic
Adds pungent aroma and savoury depth to the sauce.
Shallots
Add mild sweetness and aromatic background flavour.
Soy sauce
Adds salty, savoury depth and umami to the blend.
Cayenne pepper
Provides heat and pungent flavour.

The step that matters

Rub the mixture through a sieve. Pressing the mixture through a sieve removes solid pieces so the sauce becomes smooth and clear before it rests. Leftover solids can keep flavouring the sauce unevenly and may spoil during the ten-day rest.

Swap the clove

How well each one fits the dish's main ingredients (pepper, vinegar, sauce, garlic, shallot):

  1. Capersfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against pepper, vinegar, sauce, garlic, shallot. Candidates are from the same food group and used in at least 100 recipes.
