What each ingredient does

Onions
Frying until brown adds sweetness and deep savory flavor to the soup base.
Beef fat
Carries heat for frying the onions and adds rich, meaty flavor.
Mashed potatoes
Starch thickens the soup to a creamy, heavy texture.
Beef stock
Forms the liquid base and carries the beef flavor through the soup.

The step that matters

Frying the onions until brown. Browning onions develops sweet, complex flavors through the Maillard reaction and caramelization. Pale onions give a flat taste, so they need steady heat and time to brown evenly without scorching.
