Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

Roast and serve

  1. Place the roast in the oven and baste frequently while roasting.

  2. Roast for 15 minutes per pound for rare, longer for well done.

  3. Serve with a sauce made from the drippings, adding Harvey or Worcestershire sauce and tomato ketchup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Is the main cooked component, whose internal temperature sets how done the meat becomes.
Flour
Light coating that helps the surface brown and gives the drippings body for the sauce.
Harvey or worcestershire sauce
Adds savoury, tangy depth to the sauce made from the drippings.
Tomato ketchup
Adds sweetness and acidity to the sauce made from the drippings.

The step that matters

Roasting time per pound. Time alone does not show doneness because roasts vary in shape and starting temperature. Cooking to the target internal temperature, rather than by the clock, keeps the meat from drying out or overcooking.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
