What each ingredient does

Green tomatoes
Provide the bulk of the sauce and its tart, fresh base flavor.
Salt
Draws out moisture from the tomatoes so they drain well before cooking.
Onions
Add savory depth and body as they soften during simmering.
Red peppers
Add sweetness, colour and body to the sauce.
Horseradish
Adds sharp, pungent heat that mellows during cooking.
Sugar
Balances the acidity and heat of the tomatoes and peppers.
