Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, moisture and sweet-tart flavour that the ketchup is built on.
Vinegar
Adds acidity that sharpens flavour and helps preserve the finished ketchup.
Onions or garlic
Contribute savoury depth and aroma as the mixture cooks down.
Red peppers
Add sweetness, body and colour to the cooked mixture.

The step that matters

Boil until it thickens. Long boiling evaporates water and concentrates the tomato solids, so the ketchup sets to a spreadable texture. Stopping early leaves it thin and watery.
