Codfish Hash
Ingredients
Directions
Fry the pork
Fry the salt pork pieces in a skillet until brown; remove half and set aside.
Make the hash
Mix the codfish and potatoes with the remaining pork in the skillet.
Let it steam for 5 minutes without stirring, being careful not to let it burn.
Add the milk and stir thoroughly.
Place the reserved pork around the edge of the skillet and add a little butter on top.
Simmer over low heat for 30 minutes until a brown crust forms.
Serve
Turn it onto a platter and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Codfish
- Provides the main flaky body and savory flavor of the hash.
- Potatoes
- Bind with the fish and starch to hold the hash together and form a crust.
- Salt pork
- Adds fat and salty, smoky flavor, and its browned bits deepen the crust.
- Milk
- Adds moisture that softens the mixture and helps it cook evenly.
- Butter
- Adds fat and richness and helps the surface brown.
The step that matters
Let it steam without stirring. Leaving the hash undisturbed lets moisture escape and the bottom brown into a crust. Stirring too early or letting it scorch leaves it soggy or burnt, so the crust depends on patience and moderate heat.
