Prepare the apples

  1. Remove stems and blossoms from the crab apples.

  2. Scald the apples and pour off the first water.

  3. Cook the apples in plenty of water until they soften.

  2. For jelly, use 1 pound of juice to 1 pound of sugar.

Make the pulp

  1. Add more water to the remaining apples and stew until very soft.

  2. Strain the pulp through a sieve to remove cores and seeds.

  3. To the pulp, add brown sugar, pound for pound, and cook carefully while stirring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the pectin and tart flavor that give the jelly its set and character.
Sugar
Sweetens the juice and helps the jelly set and keep its texture.
Brown sugar
Sweetens the pulp and adds a deeper, caramel-like flavor.

The step that matters

Cooking the pulp with brown sugar while stirring. Sugar added to hot pulp can scorch on the bottom of the pan if not stirred constantly, giving a burnt taste. Sugar also needs to fully dissolve and the mixture must be cooked thick enough to hold its shape.

Swap the apple
