Salt Rising Bread
Ingredients
Directions
In a bowl, combine ¼ teaspoon coarse sea salt, ¼ teaspoon baking soda, and 1 teaspoon white sugar.
Pour 1 cup of boiling water over the mixture, then add 1 cup of cold water.
Stir in 3 teaspoons of Indian meal and enough flour to make a thick batter. Cover tightly.
In cold weather, place the bowl in a warm spot overnight.
In the morning, place the bowl in a dish of hot water and stir often for an hour.
In a separate large bowl, sift in 2/3 cup of flour.
Stir in enough warm water, 1 tablespoon of coarse sea salt, and ½ teaspoon baking soda to make a thin batter.
Thoroughly mix in the yeast from the first bowl and place in a warm area, avoiding drafts.
Let the mixture rise until it reaches the top of the pan.
