What each ingredient does

Butter
Carries the onion and herbs and adds richness to the sauce base.
Flour
Thickens the sauce as it cooks with the liquid, giving it body.
Onion
Adds savory sweetness and aromatic depth as it softens in the fat.
Sherry wine
Adds acidity and a rounded, fruity aroma to the sauce.
Mushrooms
Contribute earthy flavor and meaty texture to the sauce.

The step that matters

Cooking the flour until brown. Flour cooked in fat toasts and deepens in flavor and color, but if it is left too long it scorches and tastes bitter. Stirring constantly keeps it even before the liquid is added, which helps prevent lumps when the water goes in.

Swap the onion

How well each one fits the dish's main ingredients (butter, sage, thyme, flour, beef, nutmeg, sherry):

  1. Shallotfits better
  2. Leekfits better
  3. Parsnipfits better
