Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, combine the minced veal or beef, crushed crackers, egg, milk, butter, salt, and pepper.

  3. Mix well and shape into a loaf.

Bake and serve

  1. Place the loaf in a baking dish and bake for 2.5 hours, basting often.

  2. Allow to cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal or beef
Provides the main body and rich meaty flavor of the loaf.
Crackers
Absorb liquid and bind the meat so the loaf holds its shape and stays tender.
Egg
Binds the mixture together so it sets firm when baked.
Milk
Adds moisture, keeping the loaf from drying out during the long bake.
Butter
Adds fat that enriches flavor and keeps the loaf moist.

The step that matters

Basting during the long bake. The loaf bakes for about 2.5 hours, and regular basting adds moisture to the surface. Without it, the outer meat can dry out and toughen before the centre is fully cooked.
