Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Old chicken
Provides the main body and rich flavor of the broth as it simmers for hours.
Flour
Coats the chicken so it browns in the lard and helps thicken the broth slightly.
Hot lard
Fries the chicken, creating browning and roasted flavor on the surface.
Okra pods
Adds body and thickening to the broth as it cooks.

The step that matters

Browning the chicken before simmering. Frying the floured chicken until deeply browned builds color and toasted flavor through the Maillard reaction. Skipping or rushing this step leaves the broth paler and less rich.
